Red Szechuan berries have a distinct aromatic taste. Their floral and citrus notes (orange peel, bergamot) go well with savory duck, fish, pork and chicken dishes. Szechuan peppercorns are perfect for making chocolate desserts or fruit salads special.

We recommend grinding them finely in a grinder at the last minute and avoiding cooking them, as they tend to become bitter. You can further enhance the aroma of Szechuan pepper if you roast the whole pods. Only very small amounts are used for seasoning, but avoid completely black capsules, which are intensely bitter

Sichuan pepper comes from Southeast Asia and is one of the oldest spices used in Chinese, Indian and Japanese cuisine. You may also know it under the name fagara. It is not a classic pepper, but the dried red to black capsules of a shrub similar to an acacia tree called yellow pepper tree. Their taste is lemon-peppery, very aromatic and not as sharp as classic pepper. In China, green tea is flavored with roasted crushed Szechuan pepper.
