What pepper to use?
For perfect results, use peppercorns with a diameter of 5 mm and smaller. If you use a mixture of coloured peppers, the mixture should not contain more than 15 % pink (red) pepper.

What salt to use?
For perfect results, always use only grains of coarse salt (dry, sea or rock) with a diameter of up to 4 mm.
